My first time eating gnocchi was at an olive garden. My sister ordered it, and I was intrigued by the texture. I created this dish myself by adding various ingredients. It turned out better than I thought. Gnocchi is very simple to cook. I pan-fried the gnocchi until it was golden, and then added the rest of the ingredients.
- Potato gnocchi (I bought them from Kroger)
- Cherry Tomatoes (Cut in half_
- Fresh Spinach
- Feta Cheese
Add 2 tablespoons of olive oil to a nonstick pan and add your onion and garlic. Next, add your gnocchi. Cook and toss until they turn golden brown. Next, add in your mushrooms and sauté for 3 minutes on high heat. I don’t like slimy mushrooms, so I cook mine for a while on high heat. Next, add in your cherry tomatoes and cook for 2 minutes. Add in your spinach and two spoons of pesto. Toss and cook down until the spinach is cooked. Add 3-4 shakes of feta cheese. Feta cheese is strong, so it depends on your taste. Season with a pinch of salt and pepper. Cook for 4 minutes on medium/high heat and then serve. The best part is that I didn’t have to season it that much because the pesto helps.
I was playing around when I was cooking this and didn’t think it would turn out right. You can many things to this dish. You can add more vegetables and even meat if you want. You can eat it without the feta cheese if you want as well.
