I enjoyed cooking this meal. It was delicious and easy to make. I love eating Bok choy when I am low on vegetables. I added some mushrooms and sweet red peppers to the Bok choy. I cooked everything down in water and soy sauce to simmer it. I don’t like a crunch in Bok choy, so I cook it all the way down. This was not salty at all because I mixed it with water. I seasoned it with salt, red pepper flakes, onion flakes, and black pepper.
The tofu was simply just pan fried with flour and season salt. I used extra firm tofu, which was not watery or mushy. I do not understand how I was using soft tofu this whole time. I am proud how this meal turned out.
