If you are like me, you love roasted fish. I roasted some fish, asparagus, cherry tomatoes, and mushrooms. It’s simple and quick. I was trying to cook something quick that night and it only took 20 minutes. I roasted the tilapia in the air fryer. I was so happy to eat these vegetables (lol). I have not had enough veggies in the past, so this was refreshing. These tomatoes were $5, and I would never buy tomatoes for five dollars, but they were visually appealing. I cooked in my dorm room and did not make a mess. Anyone can make this meal. I added some quinoa rice for some carbs.
